Sablè is a traditional French shortbread cookie (meaning "sand") that originates in Sablé-sur-Sarthe, in Sarthe. When preparing it, the baker rubs cold butter into flour and sugar to form particles of dough that look like its namesake. In this savory version, all-purpose and almond flour-based dough is flavored with Parmesan and fennel seeds. The kneaded dough needs a short time to rise before it's rolled out, cut into breadstick-like shapes and baked until golden.

Ingredients

  • 100 grams butter
  • 3 eggs
  • 100 grams powdered sugar
  • 2 tablespoons cocoa powder
  • 2 ounces marsala
  • 100 grams cake flour
  • 1 teaspoon baking powder
  • 150 grams vanilla wafers
  • salt

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Add the butter to a bowl and use a wooden spoon to cream it. Add the egg yolks and mix well.
  3. Add the sugar, cocoa powder, Marsala, flour, baking powder, and wafers. Mix well.
  4. Beat the egg whites to stiff peaks with a pinch of salt. Incorporate into the batter by folding them in carefully.
  5. Butter and flour a round 22-centimeter springform pan. Pour the batter inside. Level it with the back of the spoon.
  6. Bake the cake for approximately 35 to 40 minutes, then allow it to cool.
  7. Turn the cake out onto a cake dish and sprinkle with powdered sugar.

This has to be one of my favorite cake recipes of all time. I loved how it was covered in chocolate; as everyone in our home are avid chocolate lovers. We devoured this cake in almost one day and I am already working on making another. A 5 star recipe all around.
