Even just one of these rich, dreamy and hearty cookies will send your taste buds into a twirling dance. By using a dark chocolate fondue mixture as the base and then adding coarsely chopped hazelnuts, these Chocolate and Hazelnut Cookies will be on everyone’s holiday party platters. And don’t forget the powdered sugar to top them in a sweet, white snow. Sounds like the holidays should come sooner than planned!

Ingredients

  • 200 grams dark chocolate (fondue)
  • 60 grams butter
  • 80 grams sugar
  • 2 eggs
  • 180 grams flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • powdered sugar
  • 80 grams hazelnuts (coarsely chopped)

Directions

  1. Microwave the chocolate and butter at full power in 10 second intervals, stirring after each 10 seconds until completely melted.
  2. Beat the eggs with the sugar until you get an eggnog with foam. With the whisk, gradually add the melted chocolate, stirring well.
  3. Sift flour with baking powder and salt and add them into the mix.
  4. Finally, add the coarsely chopped hazelnuts.
  5. Cover the bowl with plastic wrap and place in the fridge to harden a bit (about 2 hours).
  6. Form small balls, soak in powdered sugar, and bake in preheated oven at 180C for about 10-15 minutes.

I adored these easy to make 4 star cookies. It had a prominent chocolate taste, brought out by the bold tasting hazelnut. The cookies were soft and chewy, yet did not break into hundred of pieces when eaten. I am working on another batch as we speak.
