Chocolate and Coffee Scones

Ingredients

  • 2 1/4 cups self rising flour
  • 2 1/2 tablespoons butter (chopped)
  • 4 1/2 ounces dark chocolate (finely chopped)
  • 2 tablespoons granulated sugar
  • 2 teaspoons instant coffee (dissolved in 1 tbsp hot water)
  • 1/2 cup 2% milk (+ 1 tbsp, for brushing)

Directions

  1. Preheat oven to 425°F. Lightly grease a baking tray. Sift flour into a large bowl. Cut in butter then add chocolate and sugar. Make a well in the center. Combine coffee, 1/3 cup water and milk. Add to flour mixture and mix until just combined.
  2. Turn out onto a lightly floured surface and knead lightly. Roll out to form a 6x10 inch rectangle. Cut into 12 portions and place on prepared tray. Brush with 1 tbsp milk and bake for 12-15 mins. Let cool on a wire rack.
