A lovely sweetbread for company, the lard in this recipe can be replaced with butter or your preferred oil for baking. Topped with chocolate chips or chocolate flakes, this cake can also be flavored with cinnamon, vanilla, or any of your other favorite flavors.

Ingredients

  • 3 tablespoons chocolate bar (dark, flakes, or chocolate chips.)
  • 150 grams margarine
  • 50 grams lard (softened)
  • 350 grams sugar
  • 6 eggs
  • 200 grams flour
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a square pan with butter and flour.
  3. Use a knife to scrape chocolate bar into flakes.
  4. Put the margarine and lard in a bowl, and place the bowl in the microwave.
  5. Add all remaining ingredients, except the chocolate, and beat to a creamy mass.
  6. Add 2 tablespoons of chocolate flakes, and mix.
  7. Place the dough in the cake pan, and sprinkle with the remaining chocolate.
  8. Bake for 30-35 minutes.
  9. Check for doneness with a toothpick, and remove from the oven. Let cool.
  10. Cut into squares, and serve.

At first glance, the ingredients for this recipe read like a sweet, buttery cornbread, yet it finishes with sugar and cinnamon! We made several of these cakes for a family engagement using slight variations each time. We added cinnamon to the batter of one, dried apple pieces to another and to a third; we included orange zest to pair with the lemon. The one to which we added dried apple needed extra moisture so we made a double batch of bica and used a portion of it. All three versions were a hit!
