Ingredients

  • 230 grams butter (room temperature)
  • 150 grams granulated sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 200 grams chocolate (melted)
  • 1 egg
  • 210 grams flour
  • 90 grams cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 80 grams butter
  • 200 grams powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • 1 tablespoon milk
  • salt

Directions

  1. Preheat the oven to 150 degrees Celsius.
  2. In a bowl, mix together the butter, granulated sugar, vanilla extract, melted chocolate, and egg.
  3. Separately, sift together the flour, cocoa powder, baking powder, and a pinch of salt.
  4. Beat the two mixtures together until combined.
  5. Roll the dough into a tube shape and wrap in plastic wrap. Refrigerate 1 hour until firm.
  6. Cut the tube into 2-centimeter rounds and place the rounds on a baking tray, making sure to leave room between cookies (as they will spread out while baking).
  7. Bake for 20 minutes, then set aside to cool completely.
  8. For the filling, beat together the butter, powdered sugar, granulated sugar, vanilla extract, milk, and pinch of salt.
  9. Fill a piping bag and pipe the filling onto the top of one cookie. Top with a second cookie to make a sandwich.

I loved this recipe and the rich chocolate flavor. It did take me quite some time to mix up the two mixes and then wait for cooling and chilling in the refrigerator. It’s definitely not a cookie you can make in 10 minutes and be eating. However, if you get tired of the same old, same old when it comes to cookies, this one is worth a try. The flavors are on target and scrumptious.
