Here's an example of a sweet "salami" that's meant to resemble the original savory version, which is a traditional treat in Italy. In this recipe, chunks of butter cookies provide contrasting flecks of color and texture in the smooth dark chocolate log. Marsala wine and sea salt lend extra flavor. The mixture is formed into the salami shape using parchment paper, twisting the ends to seal. Refrigerate until firm and ready to slice and serve, with more Marsala.

Ingredients

  • 250 grams cookies
  • 100 grams dark chocolate
  • 100 grams butter
  • 130 grams sugar
  • 3 tablespoons cocoa powder
  • 1 egg
  • 3 tablespoons marsala
  • 1/2 teaspoon sea salt

Directions

  1. Break up the cookies into chunks.
  2. Melt the chocolate using a double boiler and allow it to cool slightly.
  3. Add the butter with the sugar by using a spatula until the mixture is light and foamy.
  4. In a bowl, add the chocolate, cocoa powder, egg, Marsala, salt, and the cookie pieces and mix well.
  5. Place the mixture on a sheet of parchment paper.
  6. Wrap the mixture into the shape of a salami.
  7. Twist the ends of the parchment paper closed and refrigerate the salami for 3 to 4 hours.
  8. Remove the parchment paper, coat the salami with powdered sugar, cut it in slices, and serve.

The recipe does not suggest a kind of cookie so I used peanut butter cookies. It turned out great. I only used a half cup of sugar though thinking the cookies would provide plenty of sweetness. I would suggest being careful to take time to shape the log as even as possible before refrigerating. Mine came out a little lopsided so the presentation could have been better.
