Ingredients

  • 24 grams rennet (junket, powder)
  • 500 milliliters milk
  • 800 milliliters pudding
  • 200 milliliters cream
  • 100 grams brown sugar
  • 200 grams chocolate (cooking)

Directions

  1. Mix the rennet with about half the milk (enough only to dissolve the rennet).
  2. Bring to boil the remaining milk with cream, sugar, and chocolate broken into pieces, until chocolate melts.
  3. Add the rennet, and bring to a boil on medium heat.
  4. Keep mixing with a wire whisk. When mixture boils, remove from heat for a few seconds, stir, and then return to heat until it thickens.
  5. Divide into individual bowls.
  6. Refrigerate to gain consistency, and chill completely.

Oh, the things you can do with a good chocolate pudding! We put a dollop of whipped cream on top followed by shaved chocolate and a sprig of mint.
