Forget instant pudding — homemade is so much better and requires very little fuss at all. To make this version, use your favorite baking chocolate, whether milk, semi-sweet or dark. The addition of almond flour lends subtle nuttiness, while breadcrumbs thicken and whipped egg whites infuse airiness to the mixture. Guild them with a dollop of whipped cream and — for added appeal — some chocolate shavings on top.

Ingredients

  • 70 grams baking chocolate (chopped)
  • 90 grams butter
  • 4 egg (separated)
  • 200 milliliters heavy cream
  • 70 grams almond flour
  • 60 grams breadcrumbs
  • salt
  • 100 grams sugar

Directions

  1. Preheat the oven to 160 degrees Celsius.
  2. Melt the chocolate in a double boiler and allow to cool.
  3. Cream 70 grams of butter, and then add the egg yolks, cream, and melted chocolate.
  4. Add the almond flour and breadcrumbs and mix together.
  5. Whisk the egg whites with a pinch of salt and 70 grams of sugar and fold into the mixture.
  6. Grease 8 small pudding molds of 1.5-liter capacity or 1 large mold.
  7. Sprinkle with remaining sugar and fill with the mixture.
  8. Bake for 30 minutes.
  9. Remove from the oven and serve warm with fresh whipped cream (or chocolate sauce).

This pudding had just the right amount of sweetness. I garnished each slice with a drizzle of chocolate syrup, a few raspberries and a sprig of mint! The batter could be sweeter by substituting regular baking chocolate with milk chocolate also used for baking.
