Forget instant pudding — homemade is so much better and requires very little fuss at all. To make this version, use your favorite baking chocolate, whether milk, semi-sweet or dark. The addition of almond flour lends subtle nuttiness, while breadcrumbs thicken and whipped egg whites infuse airiness to the mixture. Guild them with a dollop of whipped cream and — for added appeal — some chocolate shavings on top.

- Melt the chocolate in a double boiler and allow to cool.
- Cream 70 grams of butter, and then add the egg yolks, cream, and melted chocolate.
