These chocolate muffins are dedicated to all chocolate lovers. Unsweetened cocoa powder adds a rich chocolatey flavor to the classic muffin. Made with rich, creamy buttermilk, these muffins have a magnificent rich and dense texture with no dryness in sight. If you cannot get enough chocolate, add some chocolate chips or chunks to the top before baking. You can also add chopped nuts for an added texture and flavor boost.

Ingredients

  • 235 grams flour
  • 65 grams unsweetened cocoa powder
  • 150 grams sugar
  • 14 grams baking powder
  • 2 eggs
  • 250 milliliters buttermilk
  • 60 grams melted butter

Directions

  1. Preheat the oven to 160 degrees Celsius.
  2. In a bowl, mix together the flour, cocoa powder, sugar, and baking powder.
  3. In another bowl, lightly beat the eggs.
  4. Then stream in the buttermilk and melted butter while constantly whisking.
  5. Pour the wet ingredients into the dry ingredients and beat until the flour is just absorbed.
  6. Line a muffin pan with paper liners, or grease each tin.
  7. Fill 2/3 full with batter.
  8. Bake for 20 minutes or until a toothpick inserted into the middle comes out clean.
