Chocolate Marsala Cake with Strawberries and Mascarpone

Ingredients

  • 1 tablespoon instant coffee
  • 1/2 cup marsala
  • 2 ounces milk chocolate (melted, plus more, shaved, to serve)
  • 10 ounces mascarpone cheese (at room temperature)
  • 1 1/2 cups heavy cream
  • 18 cookies (lady's finger)
  • 10 ounces strawberries (hulled, sliced, plus more whole strawberries, to serve)

Directions

  1. Lightly spray a deep 8 inch springform cake pan with oil and line with plastic wrap. In a large bowl, dissolve coffee in 2 tbsp boiling water. Mix in 1 cup water and marsala. Transfer to a shallow dish and cool.
  2. For the mascarpone filling, whisk melted chocolate and 1/4 cup of mascarpone together until smooth. Gradually mix in remaining mascarpone. In a bowl, beat cream until soft peaks form. Gently fold in mascarpone mixture.
  3. To assemble, dip lady's fingers in coffee mixture to coat. Arrange half in base of pan, cutting to fit. Spread with half the mascarpone mixture, smoothing top. Cover with a single layer of sliced strawberries. Repeat layers and chill 2 hours until firm.
  4. Release cake from pan and carefully remove plastic wrap. Top with extra strawberries and shaved chocolate.
