Ingredients

  • 2 sticks butter (plus extra for greasing)
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 4 eggs
  • 2 2/3 cups all-purpose flour (sifted)
  • 2/3 cup cocoa powder
  • 2 teaspoons baking powder

Directions

  1. Preheat the oven to 350ºF. Grease and line a loaf pan. Cream the butter, sugar, vanilla extract and salt. Whisk in the eggs one at a time beating well between each addition. Fold in the flour, cocoa powder and baking powder.
  2. Spoon the mixture into the lined loaf pan. Bake for 55-60 mins until an inserted skewer comes out clean. Cool in the pan for 10 mins, then remove from the pan and leave to cool completely on a wire rack.
