  • 1/4 cup buttermilk (yogurt, sour cream, or the substitution in Recipe Notes all work great)
  • 1/2 teaspoon vanilla
  • 1 1/4 cups flour (unbleached, whole grain, or spelt all work great)
  • 1/2 teaspoon baking soda
  • 1/8 cup cocoa powder
  • 1 cup beets (juicing pulp made from, and other fruits and vegetables)
  • 1/3 cup chocolate chips (optional)
  • 1/3 cup walnuts (chopped, optional)
