Description

An unusual combination of cake and crepe, this cake is loaded with a nutty, chocolate flavor. You’ll be transported to the heart of Europe, where you can enjoy the fabulous taste of traditional cooking. Orange flower water and butter give this dessert a hint of sweet, rich flavor to complement the bitter of the dark chocolate.

Ingredients

  • 250 grams flour
  • 1 pinch salt
  • 3 eggs
  • milk (50 cl.)
  • 1 tablespoon oil
  • 2 tablespoons orange flower water
  • 1 tablespoon oil
  • 3 eggs
  • 100 grams butter
  • 150 grams dark chocolate (chopped)
  • 5 teaspoons chocolate-hazelnut spread
  • 1 orange (organic)
  • 20 grams granulated sugar
  • 200 grams blanched hazelnuts (chopped)
  • 2 teaspoons cocoa powder

Directions

  1. 1In a bowl, combine flour and salt.
  2. 2Add the eggs.
  3. 3Mix well with a whisk until the mixture is smooth.
  4. 4Gradually, stir in the milk , then add the oil and orange blossom water.
  5. 5Let stand for 1 hour at room temperature.
  6. 6If batter is too thick, add some milk.
  7. 7Heat a frying pan.
  8. 8Grease it lightly with a bit of oil.
  9. 9Pour a small ladle of batter and spread it over the entire surface by rotating the pan.
  10. 10Cook for less than 1 minute.
  11. 11Peel off the edges of the crepe with a spatula.
  12. 12Cook the crepes only on one side as they will continue to cook in the oven.
  13. 13Separate two eggs.
  14. 14Melt butter and chocolate in a double boiler.
  15. 15In a bowl, combine the butter /chocolate mixture, hazelnut spread, orange zest, remaining whole egg, 2 egg yolks, and sugar.
  16. 16Preheat the oven to 180 degrees Celsius.
  17. 17In a buttered springform pan, place a crepe, top with chocolate mixture, sprinkle with chopped hazelnuts and repeat until desired height.
  18. 18Bake for ten minutes.
  19. 19Let cool for 1 hour.
  20. 20Unmold the crepe cake on a serving dish and sprinkle with cocoa powder.
