Dark chocolate starts in this rich cookie recipe made from eight readily available pantry ingredients. As an added bonus, finely chopped chunks of chocolate are folded into the mix. The easy dough can be made using a hand-held mixer, or it can be combined using a wooden spoon. For gooey, soft cookies, bake them for a minute or two less than the recipe suggests. They'll keep in an airtight container for several days.

Ingredients

  • 50 grams butter
  • 100 grams dark chocolate
  • 1 eggs
  • 1 tablespoon cocoa
  • 100 grams brown sugar
  • 100 grams flour
  • 3/4 teaspoon baking powder
  • 0.83 grams powdered sugar (approximately)

Directions

  1. Melt 50 grams of dark chocolate with the butter over very low heat (or over a double boiler or in the microwave).
  2. Beat the eggs and the sugar with an electric mixer until foamy.
  3. Add the melted chocolate and butter mixture and combine well.
  4. Sift the flour with the baking powder and the cocoa and add it to the egg mixture.
  5. Finely chop the remaining 50 grams of dark chocolate and incorporate it well with the batter.
  6. Cover the bowl with plastic wrap and refrigerate it for a few hours.
  7. Preheat the oven to 180C.
  8. Shape the dough into 24 balls, coat them in powdered sugar and place them on a wax paper lined baking sheet a few inches apart.
  9. Bake the cookies for approximately 12 minutes.

We love chocolate in our home and this chocolate cookie recipe was a great addition to our list of sweet treats. The cookies were super chocolatey and I baked them slightly shorter than required; so, they turned out extra soft and slightly gooey. I will be making many more batches of these amazing 5 star cookies.
