Ingredients

  • 1/2 cup butter
  • 13 ounces dark chocolate (chopped)
  • 1/4 cup heavy cream
  • 1 cup shredded coconut (plus 2 tbsp to sprinkle)
  • 3 1/2 ounces ladyfinger cookies (broken into pieces)

Directions

  1. Line base and sides of a baking pan with parchment paper.
  2. Melt butter, chocolate and cream together over low heat, stirring. Remove from heat and mix in coconut and cookies. Transfer to prepared pan. Tap pan on a hard surface to release bubbles. Sprinkle with extra coconut and cover with plastic wrap. Chill for 2 hours to set.
  3. Remove from pan and discard parchment paper. Cut into squares. Keep chilled until ready to serve.
