  • 13 ounces semi-sweet chocolate (coarsely chopped)
  • 14 ounces sweetened condensed milk
  • 2/3 cup flaked coconut (plus additional 1 tbsp, to sprinkle)
  • 1/2 cup glace cherries (coarsely chopped)

Directions

  1. Grease and line an 8 x 4 inch loaf pan with parchment paper, extending the paper over long sides for handles.
  2. Place chocolate and milk in a large microwave-safe bowl. Microwave on high for 1 min. Stir to combine. Microwave further 30 seconds, or until melted and smooth. Add coconut and cherries; mix well. Pour into prepared pan; smooth top. Sprinkle additional coconut over top.
  3. Refrigerate 4 hours, or until set. Cut into slices to serve.
