Description

There's no need to wait for Valentine's Day to enjoy these savory Parmesan, saffron and rosemary-laced pastries. The simple dough is rolled out, cut into shapes, brushed with egg and topped with salt, pepper and almonds for added crunch before baking just until golden. They'd be a great choice for a cocktail party, paired with a glass of Champagne or crisp, dry white wine.

Ingredients

  • 150 grams flour
  • 80 grams sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 egg
  • 50 grams butter (melted)
  • 150 grams buttermilk (or milk)
  • 1 cup cereal (chocolate)

Directions

  1. Preheat oven to 190 degrees Celsius.
  2. In a bowl, add the flour, sugar, and baking powder. Mix well.
  3. To a separate bowl, add the vanilla, egg, butter, and buttermilk.
  4. Combine the wet ingredients with the dry ingredients and mix well. Add the cereal and mix well.
  5. Fill muffin pan molds 2/3 full and bake for 20 to 25 minutes. Test the center of the cupcakes with a toothpick.

This has to be one of my kids favorite muffin recipes they have ever eaten. They are super tasty and have a cream like chocolate taste to them. The muffins were perfect and didn't turn out dry like I expected. I will always make this recipe; the best 5 star muffins.
