  • 1/2 cup non fat greek yogurt (or homemade yoghurt)
  • 1 Tbsp. vanilla extract
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 1/2 cup cocoa powder (sifted)
  • 2 cups white whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup yellow squash (finely shredded, or zucchini, peel left on)
  • 1 1/2 cups shredded carrots (finely)
  • 1 apple (small sweet, I used Red Prince, finely shredded, peel left on)
  • 1/2 tsp. sanding sugar (or coarse raw, per muffin for topping)
