Description

Cake for the masses. Dial up this recipe the next time you are tasked with serving a crowd. The robust chocolate flavor, with just a hint of rum to add a twist will be long remembered. Ready in just under an hour.

Ingredients

70 grams dark chocolate (70% cocoa)
whole milk (50 cl.)
70 grams butter
1 vanilla beans
2 egg yolks
2 eggs
1 pinch salt
250 grams granulated sugar
90 grams flour
20 grams dark chocolate cocoa powder
3 tablespoons rum

Directions

1Prepare one day ahead.
2Chop the chocolate with a knife.
3Boil the milk, butter, and vanilla bean, split in two lengthwise.
4Pour over the chocolate and stir.
5In a food processor bowl, combine egg yolks, whole eggs, salt and sugar. Mix well.
6Add the sifted flour and cocoa, and keep mixing.
7Gradually pour the chocolate milk in the bowl and mix for about 10 seconds.
8Add the rum.
9Transfer the batter to an empty water bottle and store in the refrigerator for at least twelve hours.
10The next day, preheat oven to 210 degrees Celsius.
11Fill cannele tins up to 2/3.
12Bake for about 35 to 40 minutes until set.
