I don't use vinegar in my cake recipes, but I actually think it helps equalize the bitterness of the cocoa powder. The cake is rich and full of flavor with a nice amount of sweetness to it. It's very moist, which I seem to have trouble with in most chocolate powder recipes. I was pleasantly surprised how great this tasted – and with only powdered sugar as a topping!
