Spongy and moist, this chocolate cake has a rich cocoa flavor and a subtle hint of coffee throughout. This cake is made with a combination of butter and yogurt for a cake that has absolutely no hint of dryness. Baked for 50 minutes in a cake mold of your choosing, this decadently rich chocolate cake is then covered in a white chocolate or milk chocolate icing. Garnish with fresh raspberries.

Ingredients

  • 375 grams flour
  • 1 teaspoon baking powder
  • 500 grams sugar
  • 1 teaspoon vanilla extract (or vanilla pod seeds)
  • 75 grams cocoa powder
  • 2 teaspoons baking soda (sieved)
  • 200 grams butter (soft)
  • 250 milliliters yogurt
  • 3 large eggs
  • 250 milliliters coffee (boiling hot)

Directions

  1. Preheat the oven to 160C.
  2. Grease a 2.36 liter mold.
  3. Beat together all the ingredients until smooth using a food processor or by hand. Ensure the coffee is piping hot so as to react with the soda and melt the butter.
  4. Pour the cake mixture into the mold and bake for 50 minutes or until a skewer comes out clean.
  5. Ensure the mold is never more than 3/4 quarters full otherwise it may overspill.
  6. Leave to cool in the mold and cover with milk chocolate topping or white chocolate topping made with 50 milliliters cream, heated up, and add 100 grams white chocolate, stir until completely melted.
