Description

Bananas and raisins lend flavor and texture to these moist, sweet muffins, which feature yogurt to keep them light and moist. A dash of powdered sugar on top lends a special touch. Line your muffin tin with muffin cups to make cleanup easier. Store the baked muffins in an airtight container on the counter for up to three days.

Ingredients

150 grams baking chocolate (chopped)
80 grams butter (in pieces.)
150 grams sugar
2 eggs
salt
110 grams flour (sieved)
60 grams coconut flakes (optional)

Directions

1Preheat the oven to 170 degrees Celsius.
2Place the butter and chocolate in a pan, add the sugar and melt on low heat, stirring continuously until smooth. Allow to cool.
3In a bowl, gently whisk the eggs with a pinch of salt.
4Add the chocolate mixture to the beaten egg and mix. Add the flour and coconut, and mix well into a thick batter.
5Line a baking sheet with 8 6-centimeter diameter cake molds. Pour in the cake batter into each one..
6Bake for about 15 minutes, and leave to cool.
7Remove from the molds and sprinkle with additional coconut.
