  • 1 cup milk (warmed)
  • 1 vinegar (CAP, 1tsp)
  • 185 grams butter (softened)
  • 1 1/2 cups sugar (I use only 1 cup of sugar or ¾ cup of agave syrup)
  • 2 eggs (at room temperature)
  • 1 1/2 cups flour
  • 1/2 cup cocoa
  • 1 1/2 teaspoons bicarbonate of soda (I don’t like the taste it gives the cake so I use 1tsp of <)
  • 200 grams double cream
  • 1/4 cup sugar
  • 3/4 cup chocolate (melted)
  • 1 teaspoon essence (orange)

    Directions

    1. Add the vinegar to the milk and set aside. Cream the butter and sugar together until light and fluffy. Add the eggs and continue to beat until well combined.
    2. Stir the buttermilk and add it to the butter/sugar/egg mixture. Mix gently as vigorous beating will have the buttermilk flying all over.
    3. Sieve the dry ingredients together. Add them to the wet mixture and mix with a metal spoon until it forms a smooth batter.
