Description

A mere tablespoon of extra-virgin olive oil is all that's called for in this Italian-style Bundt cake, which is kept moist and tender by the addition of four whole eggs and the heavy cream in the batter. Cocoa powder--preferably bittersweet--gives the cake intense chocolate flavor, and is used to dust the greased cake pan before the batter is poured in, to keep it from sticking and help with easy unmolding.

Ingredients

4 eggs (medium)
5 tablespoons cocoa (bittersweet, powdered)
14 tablespoons granulated sugar
18 tablespoons all-purpose flour (sifted)
155 milliliters heavy cream
1 tablespoon extra-virgin olive oil
2 teaspoons baking powder
salt
oil (to grease the pan)
cocoa (to coat the pan)

Directions

1Preheat the oven to 190C.
2Beat the eggs and the sugar until light and foamy.
3Add the flour sifted together with the cocoa, the baking powder, and a pinch of salt, a little at a time.
4Last, add the heavy cream and the oil, continuing to beat with an electric mixer for a few minutes.
5Brush the bundt pan with the extra virgin olive oil and coat it with the cocoa, place the batter in the pan and level the surface.
6Bake the cake for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
7Remove the cake from the oven and allow it to cool before serving.
