Description

Ultra-rich and velvety, this soup starts with a brothy base, to which egg yolks, heavy cream and white wine are added and warmed over a double boiler until creamy. Day-old semmel bread is turned into cinnamon-scented croutons, which are sprinkled on top for textural crunch. You can use any crusty bread you have on hand.

Ingredients

  • 100 grams plain chocolate
  • 100 grams flour
  • 200 grams sugar
  • 100 grams butter
  • 2 eggs
  • 150 milliliters milk
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 16 grams vanilla essence
  • icing

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2Line and grease a square cake pan.
  3. 3Melt the butter and chocolate and leave to cool.
  4. 4In a bowl, beat the sugar, egg and milk.
  5. 5In a separate bowl, mix together the flour, vanilla, salt, and baking powder. Add the butter and chocolate to the liquid mixture. Add the liquid mixture to the dry ingredients, a little at a time, and mix well until it forms a smooth batter.
  6. 6Place the mixture in a pan, smooth until level and bake for 30 minutes; the cake should be still soft and moist.
  7. 7Leave to cool and then cut into square chunks.
  8. 8Cover each piece with chocolate icing.
