Ultra-rich and velvety, this soup starts with a brothy base, to which egg yolks, heavy cream and white wine are added and warmed over a double boiler until creamy. Day-old semmel bread is turned into cinnamon-scented croutons, which are sprinkled on top for textural crunch. You can use any crusty bread you have on hand.

Ingredients

  • 100 grams plain chocolate
  • 100 grams flour
  • 200 grams sugar
  • 100 grams butter
  • 2 eggs
  • 150 milliliters milk
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 16 grams vanilla essence
  • icing

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Line and grease a square cake pan.
  3. Melt the butter and chocolate and leave to cool.
  4. In a bowl, beat the sugar, egg and milk.
  5. In a separate bowl, mix together the flour, vanilla, salt, and baking powder. Add the butter and chocolate to the liquid mixture. Add the liquid mixture to the dry ingredients, a little at a time, and mix well until it forms a smooth batter.
  6. Place the mixture in a pan, smooth until level and bake for 30 minutes; the cake should be still soft and moist.
  7. Leave to cool and then cut into square chunks.
  8. Cover each piece with chocolate icing.

I've had allot of brownies in my day, but I will say these are so moist and chewy they are great. They have that tender consistency that most people want, not cake like at all. If you want cake like brownies, just add another egg to the mix. These are sure to please.
