Deliscious! Best black bean muffins I’ve tried yet! I used 1/2 cup of regular white sugar instead of maple syrup or honey.

If you didn’t know black beans were in it, you would never guess! It has a nice chocolate flavor and has a subtle sweetness. I added 3 tbsp of whole wheat flour to give a more cake like texture. I would add more chocolate chips from now on. I will make again...and again!

My husband and I enjoy these very much and make them often. I did make some changes. I use date syrup (about 7 dates worth) instead of maple syrup and add vanilla. I use half eggs, half egg whites. I fill up the muffins cups (they don't rise much so no problem with spilling over), add a few extra chips to each poking them down a bit, and cook a bit longer (because they are bigger). Also I double the recipe and freeze them.

I really like these. They are similar to black bean brownies I make. I have lost count how many times I have given out that recipe to family and friends who just love them. I made mini muffins and used mini chocolate chips right in the batter. Baked around 10 minutes. Also is good to add 1/2 tsp to 1 tsp of instant coffee to batter. That will enhance the chocolate flavor without seeming to be mocha flavored. Definitely make again and again.

After reading the reviews below, I made the following modifications. I used plain, fat-free refried beans instead of whole beans. I added 2 tablespoons of brown sugar and 1 tablespoon of cooking oil. I pushed the chocolate chips down into the batter. I used mini-muffin cups and used a baking time of 30 minutes, at which point the muffins tested done when I inserted a toothpick and it came out clean. (Watch out for the chocolate chips!) I took the muffins to a potluck and identified them as brownie bites. They were a huge hit!

I'm so bummed with this recipe! The outside was crispy and perfectly cooked, while being basically raw inside, not just moist. I cooked for 20 mins on 350. Then put back in for another 10 mins. May turn out better if using mini muffin tins instead. I did sub the yogurt for 1/2 avocado, 1/2 oil (1/4 cup of each). Also may want to try pressing the chocolate chips down into the batter before baking, because they do not sink in, they fall off.

Made this this morning. My son said they were tasteless and my husband loved them. I added 1/2 egg shell's worth of olive oil and 1/2 egg shell's worth of apple sauce to moisten the muffins. work out lovely. very dense very moist. almost like a brownie

When making recipes that ask for maple syrup, I have substituted molasses which has a great flavor and, my guess would, in this recipe would be similar in consistency to the maple syrup. I love pure maple syrup, so I buy Watkins Maple Syrup Extract and you really get that maple flavor without the expense of the real thing! I really want to try this recipe because the Portuguese recipes for sweets that I use black bean are really delicious!

Tami, just substitute brown sugar. 1/2 cup should do it nicely. I agree with you. Maple is terribly expensive without any flavor bonus as maple will make your house smell great but that's b/c the flavor all evaporates out.

Not bad, could be a little moister , and moore gooey , but all in all kids enjoyed so will make again
