I have a very similar recipe. The only difference? I add at least a teaspoons of lime zest. OM Goodness - it adds a lot!

I added a bit more lime juice, and cooked the rice in a rice cooker. Turned out well, and will most definitely make again.

Cooked the rice first on the stove with a little oil. Got a much “nuttier” flavor. Used a rice cooker as well. Fast and tasty!

Deeelicioso! :) The only adjustment I made was to replace part of the oil with coconut oil. Oh, and I used 1 tablespoon of storebought lime juice in place of (per) half a lime's juice (annddd... reduced the salt by just a hair). Either way, the result would have been tasty, and the texture of the rice was great! :) We tripled the recipe because we are a big family (6), and I wanted leftovers. Guess what though... NO leftovers! The whole family loved it, including 1 who doesn't usually like rice, but went back for thirds. Lastly, my daughter who normally adds additional seasoning to just about everything specifically mentioned that this was so flavorful, she didn't want to add anything to it! We are making it again right now, but this time we are going to QUINTUPLE the recipe (that's times 5) because I want LEFTOVERS!! ;)
