Ingredients

  • 1/4 cup olive oil
  • 1 onions (small, chopped)
  • 2 tablespoons tomato paste
  • 2 knorr chipotl minicub
  • 1 tablespoon sugar
  • 1 clove garlic
  • 1 tablespoon chopped cilantro fresh
  • 1/2 cup hellmann' or best food real mayonnais
  • 1 pound boneless skinless chicken breast halves

Directions

  1. Process first 6 ingredients in a blender or food processor until smooth. Stir in cilantro. Remove 1 tablespoon of mixture and combine with Mayonnaise. Refrigerate until ready to use.
  2. Thread chicken onto 8 skewers and arrange in nonaluminum baking dish; rub with remaining olive oil mixture. Cover and marinate in refrigerator about 30 minutes.
  3. Grill or broil chicken about 6 minutes or until chicken is thoroughly cooked, turning once. Serve with mayonnaise dipping sauce.
