Ingredients

  • 2 pounds sweet italian sausag links, cut into
  • 3 red bell pepper, sliced
  • 1 onions (large, thinly sliced)
  • 1 jar ragu old world style pasta sauc
  • 1 tablespoon chipotle peppers
  • 1/4 cup chopped fresh cilantro
  • 96 flour tortillas (or corn tortillas, warmed)
  • 1 cup queso fresco
  • 1 tablespoon adobo sauce (reserved)

Directions

  1. Brown sausage in deep 12-inch nonstick skillet over medium-high heat, stirring occasionally. Add red peppers and onion and cook, stirring occasionally, until vegetables are tender, about 5 minutes. Stir in Pasta Sauce and chipotle pepper with adobo sauce and cook, stirring occasionally, until thickened, about 12 minutes. Stir in cilantro. Serve in tortillas with cheese and, if desired, your favorite Taco Fixin's*.
