Ingredients

  • 2 1/2 chicken breasts (skinned, boneless)
  • 2 tablespoons sour cream
  • 1 can red bell pepper
  • 1/2 chili pepper (chipotle)
  • 1/3 cup milk (you can also use evaporated milk)

Directions

  1. Slice the chicken breasts into large strips.
  2. Heat a frying pan with a dash of vegetable oil on high, and grill the chicken breasts until golden brown.
  3. Mix the sour cream, 1/2 can red bell peppers, chipotle pepper, and milk using a blender.
  4. Pour the mixture into the frying pan with the chicken breasts and add the rest of the red bell peppers. Put the lid on the pan and let it cook for 4 minutes.
  5. Serve with salad or rice as a side dish.

Shredding this spicy chicken and putting it in a taco would taste amazing. It could probably be frozen in individual containers so that you could just microwave it and heat it up to have with some tortillas for lunch at work. It is much cheaper to have lunches that way, instead of going out to eat.
