Ingredients

  • 1 teaspoon ground ginger
  • 100 milliliters soy sauce
  • 1 teaspoon sugar
  • 2 boneless skinless chicken breasts
  • 100 grams raw almonds
  • 1 tablespoon vegetable oil
  • 1 carrot
  • 1 shallot
  • 200 milliliters chicken stock
  • 1 teaspoon cornstarch

  1. Add the ginger, soy sauce, and sugar to a bowl. Add the chicken to the bowl and coat well. Cover the bowl with plastic wrap and refrigerate for 1 hour.
  2. Add the almonds to a skillet and toast on medium heat for about 5 to 10 minutes. Remove from the heat and set aside.
  3. In the same skillet, add the oil, carrot, and shallot. Saute for 5 minutes. Add the almonds and mix well. Set aside.
  4. Drain the chicken and add to the skillet. Saute for 3 minutes on each side.
  5. Add the almonds and vegetables. Cover with chicken stock and let simmer 10 minutes. Before finishing, add the cornstarch dissolved in a little cold water. Let simmer for another 2 minutes.

This recipe is delicious. I have made it twice and my family and I loved it both times. The first time I made it I followed the recipe exactly as shown. Very good! The second time I followed the recipe as shown but also added frozen peas to the veggie mix. Even better!
