- 1 melon (large old, remove seeds and cut into big pieces)
- 2 cups pork ribs (generous of lean, cut into big pieces)
- 5 dates
- 5 dried scallops
- 1 teaspoon wolfberries
- 2 liters water (or more)
- dried oysters
- dried cuttlefish
- Boil a small pot of water and put in pork ribs for 2 mins. Drain and set aside.
- Use a 6L dutch oven and put in pork ribs, old melon, red dates and dried scallops. I also added a few pieces of dried cuttlefish and a very tiny piece of salted fish, so no salt is needed. Add water... lots of it and bring soup to a boil and simmer over small flame for 2 hours. Done!
