  • 5 cucumbers (peeled and cut into 1/2 x1 1/2 inch sticks)
  • 1/2 cup sea salt
  • 1/2 cup white sugar
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 tablespoons chili bean sauce (toban djan)
  • 1 tablespoon hot chili oil
  • 2 red chile peppers (4 inch fresh hot, sliced)

I love cucumbers/pickles and enjoy making different cucumber salads. I'm glad I stumbled onto this one. It's definitely unique and has a taste like nothing I've made before. It was sweet and spicy all at the same time. The vinaigrette is a perfect balance, and the cucumbers really take on the flavor well. We really enjoyed this as a nice side dish or just to eat as a little snack. Will be making this again in the future!
