Description

If you cannot find guajillo chile peppers, you can substitute ancho chile peppers or pasilla peppers. Ingredients

17 guajillo chili peppers (seeded and deveined)
1 kilogram pork meat
water
1/2 onions
7 cloves garlic
bay leaf
1/2 cup vegetable oil
1/2 cup apple cider vinegar
salt
4 tablespoons cumin
1 tablespoon ground black pepper
sugar

Directions

1Place the Guajillo chilies in a bowl with water. Soak overnight.
2In a pressure cooker, add the pork, 1/4 onion, 1 clove of garlic, and bay leaf. Add enough water to cover the meat.
3Once it is cooked, shred the meat.
4In a saucepan, heat the oil and fry the meat.
5In a blender, add the chilies, 1/4 onion, 6 cloves of garlic, vinegar, and salt to taste. Puree until smooth.
6Pour the sauce over the meat. Add vegetable oil if needed.
7Season with salt, add the cumin and pepper, and, if needed, add a pinch of sugar. Continue to cook.
8Serve on tortillas to make tacos.
