A mushroom lover's perfect picnic side dish. Try using a variety of mushrooms to give a different earthy flavor.
- 8 ounces fresh mushrooms (sliced)
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- 1/4 teaspoon tarragon
- 1/4 teaspoon sugar
- 1/4 teaspoon salt
- parsley (optional garnish)
- In a small bowl, mix together the ingredients for the lemon vinaigrette. In a larger bowl, toss mushroom slices with vinaigrette. Garnish with parsley.
