  • 1 1/2 tsp. chinese five-spice powder
  • 2 cloves garlic (smashed)
  • 1 Tbsp. ginger (powdered)
  • 5 oz. chili powder
  • 4 oz. paprika
  • 4 oz. sugar
  • 2 Tbsp. onions (minced)
  • 1 Tbsp. salt
  • 1 Tbsp. white pepper
  • 1 Tbsp. cayenne pepper
  • 3 cloves garlic (minced)
  • 14 lb. fresh leg of pork (boneless)
