A complete meal in one dish, this chili pie begins with a layer of mashed potatoes followed by a layer of savory beef chili and topped with a layer of melty cheese. Delicious and ready in less than an hour, this gluten free dish makes a great dinner.

Ingredients

  • mashed potatoes (enough to cover the bottom of a baking tray)
  • olive oil
  • 1 onion (small)
  • 3 garlic cloves
  • 2 cans tomato
  • 2 coriander (sprigs)
  • 500 grams ground beef
  • salt
  • 1 can red beans (cooked)
  • mozzarella cheese

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Cover the bottom of a baking tray with mashed potatoes.
  3. Heat a drizzle of olive oil in saucepan on medium heat.
  4. Add the minced onion and garlic cloves, and let cook.
  5. Add the tomatoes and coriander, and bring to a boil
  6. Add the meat, stirring and separating the pieces well. Cover and let cook for about 10 minutes, stirring once or twice.
  7. Check the seasoning.
  8. Add the drained beans to the saucepan, mix well, and bring to a boil.
  9. Remove from heat, and pour in baking tray on top of the mashed potatoes.
  10. Cover the mixture with mozzarella cheese, and bake until golden.

What's better than normal chili? A chili baked over mashed potatoes. I'm not sure this could be classified as a pie, but it sure is delicious. The seasoning is great. I love the smoothness of the potatoes with the rest of the chili and beans texture. Topping it with cheese and letting it develop a little crust on top is a nice touch at the end.
