Description

A complete meal in one dish, this chili pie begins with a layer of mashed potatoes followed by a layer of savory beef chili and topped with a layer of melty cheese. Delicious and ready in less than an hour, this gluten free dish makes a great dinner.

Ingredients

  • mashed potatoes (enough to cover the bottom of a baking tray)
  • olive oil
  • 1 onions (small)
  • 3 garlic cloves
  • 2 cans tomatoes
  • 2 coriander (sprigs)
  • 500 grams ground beef
  • salt
  • 1 can red beans (cooked)
  • mozzarella cheese

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Cover the bottom of a baking tray with mashed potatoes.
  3. 3Heat a drizzle of olive oil in saucepan on medium heat.
  4. 4Add the minced onion and garlic cloves, and let cook.
  5. 5Add the tomatoes and coriander, and bring to a boil
  6. 6Add the meat, stirring and separating the pieces well. Cover and let cook for about 10 minutes, stirring once or twice.
  7. 7Check the seasoning.
  8. 8Add the drained beans to the saucepan, mix well, and bring to a boil.
  9. 9Remove from heat, and pour in baking tray on top of the mashed potatoes.
  10. 10Cover the mixture with mozzarella cheese, and bake until golden.
