Ingredients

  • 5 1/4 ounces mixed greens (package)
  • 1 bunch spring onions (finely sliced)
  • 1/2 lime (removed with vegetable peeler or paring knife and then cut into thin matchsticks)
  • 1 handful cilantro leaves (fresh)
  • 7 ounces tiger shrimp (ready-to-eat)
  • 1/2 red chili (seeded and finely chopped)
  • 6 tablespoons mayonnaise
  • 1 lime
  • 1/2 lime
  • flatbread (Poppadums, or other crisp, to serve)

Directions

  1. Place greens in a bowl. Add onions, lime zest, cilantro leaves, shrimp and chili. Toss ingredients together.
  2. Arrange salad in 4 serving bowls. Place the dressing ingredients in a bowl and season. Whisk together then drizzle over the salad. Serve with poppadums.
