- 1 1/2 lb. beef (thinly sliced, I find mine at whole foods, labeled "stir fry beef")
- 1 tsp. salt
- 1 tsp. pepper
- 1/4 cup olive oil
- 3 Tbsp. brown sugar
- 1 chipotle pepper in adobo sauce (diced)
- 1 can chipotles in adobo
- 2 tsp. adobo sauce
- 4 garlic cloves (minced)
- 2 Tbsp. coconut oil
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 sweet onion (sliced)
- jasmine rice (coconut)
- 1 1/2 cups jasmine rice (I use brown jasmine rice from Trader Joes)
- 1 1/2 cups coconut milk (light canned)
- 1/2 cup coconut water
- 1/4 tsp. salt
- 1 1/2 Tbsp. coconut oil
- 2 Tbsp. shredded unsweetened coconut (finely)
