Ingredients

  • 750 milliliters olive oil (high quality)
  • 3 tablespoons chili flakes
  • 1 stick rosemary
  • 1 whole dried chile (for garnish)

Directions

  1. Gently heat 200 milliliters of oil with the chili flakes in a deep pan or wok for 4 minutes, taking care not to boil.
  2. Strain the chili flakes and pour the oil into a clean, sterilized bottle.
  3. Fill the bottle with the remaining oil.
  4. Add the rosemary and a few whole chillies.
  5. Leave to cool.
  6. Oil will keep for months and can be topped up with fresh oil.
  7. Flavor will become spicier with time.
