Would give 3.5 if I could based on consensus of my kids. Was good and easy to make but feel like it needs a little more flavor depth. I added fresh ginger in addition to half the ground ginger it called for. I also added more veggies - peas, carrots, and asparagus that I had on hand - and used kale instead of spinach.

Beautiful taste. Next time I’ll use half a teaspoon of chilli not a whole teaspoon, but otherwise it was perfect

Very filling and delicious. The second time I made it, I cooked the potatoes and the quinoa at the same time (in separate pots). This saved time since I didn't have to wait for the potatoes to cook to then add them to the quinoa and wait for the quinoa to cook. Couldn't tell any difference in flavor, just quicker cook time, so I would recommend this way.

lots of ingredients were added (sweet pepper, kale instead of spinach and various spices) which brought it together, i think. overall, pretty good.

I've been looking for creative vegan recipes and I loved this one, it was really simple and easy to follow. It also didn't have any obscure ingredients so it was easy to find them. It turned out to be really delicious and so healthy, my husband also approved. I may try the same recipe again but with sweet potatoes.
