  • 1 tomato (chopped)
  • 3 cups water

Directions

  1. Heat the olive oil in a skillet at medium-high.
  2. Add the onion and garlic, and let it cook for 2 minutes while stirring often.
  3. Add the curry to the skillet, stir, and let it cook for 30 seconds.
  4. Add the mushrooms and let them cook until golden brown, stirring often.
  5. Add the chickpeas, tomato, water, and boil for 15 minutes before serving.

Add in some coconut milk and cilantro to this soup for an Indian food taste. This is a different soup that tastes amazing.
