  • 1 cup wheat berries (preferably freekeh, green wheat berries, buy in middle eastern store or use kamut, spelt berries or barley)
  • 2 aubergines (/ eggplants)
  • 2 tablespoons olive oil (cold-pressed, or coconut oil)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground sumac (buy in middle eastern store)
  • 4 tomatoes
  • 1 handful fresh flat leaf parsley
  • 2 tablespoons olive oil (cold-pressed)
  • 1/2 lemon (juice)
  • 3 tablespoons spice blend (Za’atar, recipe below)
  • 1/2 cup goat (’s cheese, crumbled)
  • 4 tablespoons toasted sesame seeds (lightly)
  • 4 tablespoons ground sumac
  • 2 tablespoons dried thyme
  • 1 pinch sea salt
  • 1 tablespoon ground cumin (is a really nice addition, but optional)
