  • 1 shallot (minced)
  • 2 serrano peppers (finely chopped, 2 peppers will yield a very spicy stew)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 1/2 tablespoon turmeric root (minced fresh, about 3 inches, or use 1 and 1/2 tsp. dried turmeric, added along with the curry powder)
  • 1/2 tablespoon mild curry powder
  • 14 ounces coconut milk (can of full-fat, plain, or about 1 and 1/2 cups)
  • 1 cup water
  • 1/2 cup pineapple juice (100%)
  • 2 teaspoons soy sauce (or tamari or liquid aminos)
  • 1 potato (medium to small, cubed, skin is OK)
  • 1 sweet potato (medium to small, cubed, skin is OK)
  • 1/2 cup chickpeas (cooked, rinsed well and drained)
  • 2 tablespoons lime juice (freshly-squeezed)
