Chicken, Pesto and Provolone Panini

  • 1 boneless skinless chicken breast (large, cut crosswise into 4 thin slices)
  • 1 tablespoon oil
  • 1 lemon peel (grated and lemon juiced)
  • 1 clove garlic (crushed)
  • 1/4 cup basil pesto
  • 8 slices ciabatta bread
  • 2 tomatoes (sliced)
  • 4 slices provolone cheese

Directions

  1. Place the chicken slices in a shallow bowl. Combine the oil, lemon peel and juice, and garlic and pour over the chicken slices. Set aside to marinate for 10 mins.
  2. Heat a large skillet on high heat. Cook the chicken for 2 mins each side, until golden.
  3. Spread the pesto onto 4 ciabatta slices. Top each with sliced tomato, a slice of provolone, a piece of chicken and remaining bread. Cook in a panini press for 2-3 mins, until golden. Serve hot.
