Ingredients

  • 1 tablespoon oil
  • 1 red pepper (deseeded, finely chopped)
  • 1 onions (finely chopped)
  • 1 pound ground chicken
  • 1 ounce taco seasoning mix (packet)
  • 12 ounces sweet corn (canned, rinsed)
  • 1 avocado (pit removed, flesh finely chopped)
  • 8 taco shells
  • 5 ounces shredded lettuce
  • 4 1/4 ounces cheddar cheese (grated)
  • tomato salsa (to serve)
  • sour cream (to serve)

Directions

  1. Preheat oven to 350°F.
  2. Heat oil in a large frying pan on high. Sauté pepper and onion for 3-4 mins, or until tender. Add chicken. Brown well for 4-5 mins, breaking up lumps with the back of a spoon.
  3. Add taco seasoning, stirring well. Mix in sweet corn and 3/4 cup water. Bring to a boil. Reduce heat and simmer for 2-3 mins, or until slightly thickened. Gently stir in avocado.
  4. Meanwhile, place taco shells on a baking sheet and warm in the oven according to package instructions.
  5. Fill tacos with chicken mixture. Top with lettuce, cheese, salsa and sour cream.
