  • 12 ounces broccoli florets (3 cups)
  • 1/2 yellow onion (large)
  • 8 ounces cremini mushrooms
  • 2 cloves garlic
  • 3 tablespoons butter (for casserole)
  • 1/3 cup flour
  • 1 1/2 cups chicken broth
  • 1 1/2 cups half and half
  • 1 teaspoon salt (more to taste)
  • 1/4 teaspoon black pepper (more to taste)
  • 1/3 cup sour cream
  • 1/4 cup shredded cheddar cheese (for casserole)
  • 4 cups cooked rice
  • 3 cups cooked chicken (diced or shredded)
  • 32 round buttery crackers (crushed into crumbs, ex: Ritz)
  • 1/2 teaspoon garlic powder
  • 1/4 cup shredded cheddar cheese (for topping)
  • 3 tablespoons butter (melted, for topping)

    Directions

    1. Preheat the oven to 375°F.
    2. Spray a 9x13-inch casserole dish with nonstick cooking spray. Set aside.
    3. Place the broccoli in a large microwave-safe bowl. Add a splash of water, and cover the bowl with plastic wrap. Microwave the broccoli on high for 105-120 seconds, until it is bright green and crisp-tender. Set aside.
