  • 1 tablespoon olive oil
  • 7 ounces chicken breast
  • 2 tablespoons fresh parsley (chopped)
  • 1 ounce black olives (chopped)
  • 1/2 pound chopped tomatoes
  • 2 ounces mozzarella (sliced)

Directions

  1. Preheat oven to 400°F. Grease a baking dish. Heat oil in a frying pan, add chicken and sauté for 1-2 mins on each side until cooked through. Remove from pan and arrange in prepared baking dish. Mix parsley, olives, and tomatoes then pour over chicken. Add mozzarella and bake for 25-30 mins. Serve.
