  • 4 russet potatoes (large, rinsed and scrubbed)
  • 8 strips bacon
  • nonstick cooking spray
  • 3/4 teaspoon salt (for potatoes)
  • 1/4 teaspoon black pepper (for potatoes)
  • 1/3 cup sour cream
  • 3 tablespoons basil pesto
  • 3/4 teaspoon salt (for filling)
  • 1/4 teaspoon black pepper (for filling)
  • 1 1/2 cups cooked chicken (diced or shredded)
  • 1/4 cup shredded cheddar cheese (for filling)
  • 1/2 cup shredded cheddar cheese (for topping)

    Directions

    1. Preheat oven to 400°F.
    2. Prick each potato a few times with fork and wrap individually in aluminum foil.
    3. Place potatoes directly on middle rack of oven. Bake potatoes until fork-tender, 70-80 minutes. Remove potatoes from oven and allow them to cool until they can be easily handled. While potatoes cool, cook bacon.
