A quick and simple dish to make on a weeknight. I’ve also substituted 1 teaspoon of dried tarragon, added to the pan just before the broth, for the 1 tablespoon of fresh rosemary as a delicious substitution.

I cook the chicken by itself in butter and use the broth in a mixture of stir fried onions, potatoes, carrots, and peas. Put the chicken on top, and yum! Probably would be good as a soup too.

Fantastic! Doctored it up a little by adding minced onion and garlic after frying chicken. Then added a little flour to the pan before deglazing the pan with chicken broth. This helped to thicken sauce. Doubled the sauce and added fresh thyme and tarragon along with the rosemary. Allowed to cook slowly to infuse all flavors and sauce to thicken nicely. Next time I will use boneless, skinless chicken thighs.

This chicken is one of my favorite dishes. I usually double the sauce (because I like to douse the chicken with it) and add Wondra because I like a thick sauce. Absolutely delicious! Thank you!
